Quesadillas

When I grocery shop I either buy food, and struggle to put meals together all week, or my list is very meal driven and we are missing snacks in between. Anybody else like that? Well last week was a 'food' week. There was a ton of food in the house, but I had no real specific meals I'd planned on making.

When the kids start volunteering to help cook dinner, it's usually a sign that they are getting hungry, don't smell anything cooking, and figure if they politely suggest helping, that will speed up the process haha.

With no meal in mind, and a craving for something that had butter, bacon, and cheese, I settled on quesadillas! We still had plenty of tortilla wraps from our chicken caesar wraps last week, and quesadillas could satisfy all of my cravings in one.

Now to keep things allergy free for my middle child, I used vegan butter, and vegan cheese, but the veggies and seasoning remained the same. I of course added more cheese on top of the veggies before closing it up, and I even sampled the one with vegan cheese in it, and I was impressed! Feel free to add chicken, shrimp or whatever the meat you'd like. We didn't have any more Chicken when I made this so bacon was the only goodie I added.

Ingredients:

Tortillas

Shredded Cheese (vegan or cheddar)

1/2 tsp Butter (vegan or regular butter)

Cherry Tomatoes

1/2 Red Onion

1/8 cup Green Onions

1/8 cup Cilantro

Bacon (to taste, I used 2 pieces for my one quesadilla)

Salt (to taste)

Garlic Powder (to taste)

Ground Cumin (to taste)

Chilli Powder (to taste)

Directions:

1. Chop veggies and sit to the side

2. Melt butter in a skillet over medium heat

3. Add tortilla to the pan, and sprinkle cheese on one half. Let it sit for about a minute until the cheese starts to melt. (FYI If you are using vegan cheese it takes quite a bit longer to melt.)

4. Add veggies on top of the cheese, and seasoning (cooked meat too if you've chosen to add some in.)

5. Sprinkle more cheese on top of your veggie/meat filling

6. Fold the blank side of the quesadilla on top of the filling side, and cook for a another minute or two

7. Remove from pan, cut in slices, and enjoy!
